Fluffy Southern Buttermilk Pancakes

Ingredients:

• 2 cups all-purpose flour
• 2 tablespoons granulated sugar
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon salt
• 2 cups buttermilk
• 2 large eggs
• 4 tablespoons melted butter
• 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; small lumps are fine.
  4. Heat a lightly buttered or oiled skillet over medium heat.
  5. Pour about 1/4 cup of batter for each pancake onto the hot surface.
  6. Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.
  7. Serve warm with butter, syrup, or your favorite toppings.

Tips

• For extra fluffy pancakes, let the batter rest for 5 minutes before cooking.
• Do not press down on the pancakes while cooking; it will deflate them.
