Ingredients:
1 box cheesy Mexican rice, prepared according to package instructions
1 lb ground beef
1 packet taco seasoning
1/2 cup water
4 burrito-size flour tortillas
1 can refried beans
1 (19 oz) can red enchilada sauce
2 cups shredded cheese (sharp cheddar and pepper jack)
Instructions:
1. Prepare the Rice
Cook the cheesy Mexican rice according to the package instructions and set aside.
2. Cook the Beef
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the taco seasoning and 1/2 cup water, stir well, and simmer for about 5 minutes until thickened.
3. Warm the Tortillas
Warm the flour tortillas in a skillet or microwave for a few seconds until soft and easy to roll.
4. Assemble the Enchiritos
Spread a layer of refried beans down the center of each tortilla. Add a spoonful of cheesy Mexican rice and a portion of the seasoned beef on top.
5. Roll the Tortillas
Roll each tortilla like a burrito and place seam-side down in a lightly greased baking dish.
6. Add Sauce and Cheese
Pour the red enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded cheddar and pepper jack cheese over the top.
7. Bake
Bake in a preheated oven at 350°F (175°C) for 15–20 minutes, or until the cheese is melted and bubbly.
Serving Suggestions
Serve hot with sour cream, chopped cilantro, diced tomatoes, or sliced jalapeños if desired.

- You can substitute ground turkey or shredded chicken for the beef.
