Easy Thai Baked Chicken Meatballs

Ingredients:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon red curry paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil

Directions :

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, cilantro, green onions, garlic, ginger, soy sauce, fish sauce, lime juice, red curry paste, salt, and black pepper. Mix until well combined.
  3. Using your hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. Place the meatballs on the prepared baking sheet, spaced evenly apart.
  4. Drizzle the vegetable oil over the meatballs to help them brown. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  5. Serve the meatballs warm with a side of rice or noodles, and garnish with additional cilantro and lime wedges if desired.
