Easy Hobo Casserole

Ingredients

  • 1 lb ground beef or turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, thinly sliced
  • 2 cups carrots, thinly sliced
  • 1 can (15 oz) green beans, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 cup shredded cheddar cheese (or a cheese blend)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the meat: In a large skillet over medium heat, brown the ground beef (or turkey) with the onion and garlic until fully cooked. Drain excess grease.
  3. Combine ingredients: In a large bowl, mix together the cooked meat, potatoes, carrots, green beans, cream of mushroom soup, and milk. Season with Italian seasoning, salt, and pepper.
  4. Assemble: Spread evenly in the prepared baking dish and cover with foil.
  5. Bake: Cook covered for 45 minutes.
  6. Add cheese: Remove foil, sprinkle shredded cheese on top, and bake 15 more minutes until the cheese is melted and bubbly and the vegetables are tender.
  7. Rest & serve: Let sit for 5 minutes before serving.

Servings

6 servings — about 360 kcal each.

Tips & Variations

  • Add a handful of corn or peas for extra color and sweetness.
  • Swap cream of mushroom with cream of chicken for a lighter flavor.
  • Use sweet potatoes instead of white potatoes for a twist.
