Easy Cheesy Jalapeño Popper Dip

 

Ingredients:

  • 16 oz cream cheese, softened
  • 1 package bacon, cooked and chopped (reserve some for topping)
  • 1 cup shredded cheddar cheese
  • 2/3 cup shredded mozzarella cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 8 jalapeños, roasted, deseeded, and minced (reserve some for topping)
  • 1 head garlic, roasted
  • 1 tbsp olive oil

Instructions:

  1. Preheat oven to 400°F. Place jalapeños and whole garlic head on a baking tray, drizzle with olive oil, and roast for 30–40 minutes until soft.
  2. Cool slightly, deseed and mince jalapeños. Squeeze roasted garlic cloves out of the skins.
  3. Reduce oven temperature to 350°F. Cook bacon until crispy; chop and set aside.
  4. In a large bowl, mix cream cheese, sour cream, mayonnaise, garlic powder, salt, pepper, cheddar, mozzarella, bacon, roasted jalapeños, and roasted garlic until smooth.
  5. Spread mixture into an oven-safe dish or cast-iron skillet.
  6. Top with reserved bacon, jalapeños, and extra cheese if desired.
  7. Bake at 350°F for 30 minutes, until hot and bubbly. Serve warm.
