Ingredients:
- 375 g (3 cups) all-purpose flour
- 2 tablespoons softened butter
- 7 g dry yeast (or 20 g fresh yeast)
- 5 tablespoons sugar (≈ 60 g)
- 240 ml (1 cup) warm milk
Instructions:
- In a small bowl, dissolve the yeast and 1 tablespoon of sugar in the warm milk. Let it rest for 10 minutes until foamy.
- In a large mixing bowl, combine the flour, remaining sugar, and butter.
- Pour the yeast mixture into the flour and knead until you get a soft and slightly sticky dough (about 10 minutes by hand or 5 minutes with a stand mixer).
- Cover and let the dough rise for 1 to 1½ hours, until it doubles in size.
- Punch down the dough, roll it out on a floured surface to about 1 cm thickness, then cut circles using a cookie cutter or a glass.
- Place the doughnuts on a floured tray, cover with a cloth, and let rise for another 30 minutes.
- Heat oil to 170°C (340°F) and fry the doughnuts for 1–2 minutes on each side until golden brown.
- Drain on paper towels, then roll in sugar or let cool before glazing.
