Divorce Salad

 

Ingredients:

  • 1 (15-oz) can chickpeas, rinsed and drained
  • 1 (15-oz) can black beans, rinsed and drained
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Add chickpeas and black beans to a large bowl.
  2. In a small bowl, whisk olive oil, red wine vinegar, oregano, salt, and black pepper.
  3. Pour dressing over the beans and toss to coat.
  4. Add red onion, feta, and parsley. Gently mix until combined.
  5. Cover and refrigerate at least 30 minutes (overnight is best for flavor).
  6. Serve chilled or at room temperature.
