Ingredients:
- 1 (15-oz) can chickpeas, rinsed and drained
- 1 (15-oz) can black beans, rinsed and drained
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions:
- Add chickpeas and black beans to a large bowl.
- In a small bowl, whisk olive oil, red wine vinegar, oregano, salt, and black pepper.
- Pour dressing over the beans and toss to coat.
- Add red onion, feta, and parsley. Gently mix until combined.
- Cover and refrigerate at least 30 minutes (overnight is best for flavor).
- Serve chilled or at room temperature.
