Delicious & Super Easy Breakfast Casserole

Ingredients:

  • 1 lb breakfast sausage
  • 12 large eggs
  • ½ cup milk
  • Salt & pepper (to taste)
  • Frozen hash browns (enough to cover a 9×13 dish)
  • 2 cups shredded cheddar cheese (divided)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the sausage until fully cooked. Drain excess grease and set aside.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Grease a 9×13 baking dish. Spread a layer of hash browns evenly across the bottom.
  5. Add the cooked sausage on top, then sprinkle with 1 cup of cheese.
  6. Pour the egg mixture evenly over everything.
  7. Top with the remaining cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake another 20 minutes, or until the eggs are set and the top is golden and bubbly.

Serving Tips:

  • Serve warm with fresh fruit or toast.
  • Add salsa or hot sauce for a little kick
  • Can be made ahead and reheated for busy mornings!
