Ingredients :
Fritter Batter

2 cups all-purpose flour

¼ cup sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

¼ teaspoon nutmeg (optional)

½ teaspoon salt

½ cup milk (whole milk preferred)

2 large eggs

2 tablespoons unsalted butter, melted

2 large peaches, peeled, pitted, and diced (or substitute with apples if desired)

1 teaspoon vanilla extract
Vanilla Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk (adjust for consistency)
- ½ teaspoon vanilla extract (or swap for almond extract for a twist)
Instructions :
1. Prep the Peaches
Peel, pit, and dice the peaches.
Toss them in a little cinnamon to bring out that warm, fruity flavor.
2. Mix Dry Ingredients
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
3. Mix Wet Ingredients
In a separate bowl, whisk milk, eggs, melted butter, and vanilla until smooth.
4. Combine the Batter
Pour wet mixture into the dry ingredients. Stir gently until just combined — it should be thick and slightly lumpy.
Fold in the cinnamon-coated peach chunks.
5. Bake the Fritters
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Spoon or scoop batter onto the sheet in rustic mounds.
Bake for 15–18 minutes, or until golden brown and a toothpick inserted comes out clean. Watch closely after 15 minutes.
6. Make the Glaze
While fritters bake, whisk together powdered sugar, milk, and vanilla until smooth.
Once fritters are slightly cooled (but still warm), drizzle or dunk them in glaze. For extra sweetness, let the first glaze set and double dip!
