Cucumber Ranch Crack Salad

Ingredients:

  • 3 cups diced cucumbers (about 2 large cucumbers)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon ranch seasoning mix
  • 2 tablespoons chopped green onions (optional)
  • Salt and black pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the diced cucumbers, shredded cheddar cheese, and crumbled bacon.
  2. In a separate small bowl, mix the sour cream, mayonnaise, and ranch seasoning until smooth.
  3. Pour the dressing over the cucumber mixture and gently stir until everything is evenly coated.
  4. Add chopped green onions if using, and season with salt and black pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.

Serving Suggestions

Serve chilled as a refreshing side dish with grilled chicken, burgers, or barbecue meals.

Notes

  • For extra crunch, add diced celery.
  • Greek yogurt can be used instead of sour cream for a lighter option.
  • Best enjoyed fresh, but it can be stored in the refrigerator for up to 2 days.
