Ingredients:
- 2 lbs ground beef (80/20)
- 1 packet dry onion soup mix
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1/2 cup shredded mozzarella (optional)
- 1/2 cup grated Parmesan
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme or Italian seasoning
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tbsp butter
- 1 cup beef broth
- 1 cup shredded Gruyère or Swiss cheese
Instructions:
- Melt butter in a skillet and cook sliced onions for 10–12 minutes until caramelized. Set aside.
- In a large bowl, mix beef, onion soup mix, garlic, breadcrumbs, eggs, milk, Parmesan, ketchup, Worcestershire, thyme, salt, and pepper.
- Shape into a loaf and place in the slow cooker.
- Add caramelized onions over and around the loaf. Pour broth into the bottom (not on top).
- Cook on LOW 6–7 hours or HIGH 3–4 hours.
- Add Gruyère or Swiss cheese on top for the last 10 minutes to melt.
- Slice and serve with the onion broth over each piece.
