Ingredients:
• 2 lbs chicken wings (split, tips removed)
• 2 cups buttermilk
• 1 tablespoon hot sauce (optional)
• 2 cups all-purpose flour
• 1 cup cornstarch
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 tablespoon baking powder (helps crisp the skin)
• Oil spray (for grilling)
Instructions:
- Place the chicken wings in a bowl and cover with buttermilk. Add hot sauce if using. Marinate for at least 1 hour or overnight in the refrigerator.
- In another bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, black pepper, and baking powder.
- Remove the wings from the buttermilk and let excess drip off.
- Dredge each wing in the flour mixture, shaking off extra.
- Arrange the coated wings on a tray and let them rest for 10–15 minutes to help the coating stick.
- Preheat your grill to medium-high heat (around 375–400°F / 190–200°C).
- Lightly spray the wings with oil, then place them on the grill.
- Grill for 25–30 minutes, turning occasionally, until crispy and cooked through.
- Serve immediately with your favorite dipping sauce.
