Crispy Grilled Chicken Wings

Ingredients:

• 2 lbs chicken wings (split, tips removed)
• 2 cups buttermilk
• 1 tablespoon hot sauce (optional)
• 2 cups all-purpose flour
• 1 cup cornstarch
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 tablespoon baking powder (helps crisp the skin)
• Oil spray (for grilling)

Instructions:

  1. Place the chicken wings in a bowl and cover with buttermilk. Add hot sauce if using. Marinate for at least 1 hour or overnight in the refrigerator.
  2. In another bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, black pepper, and baking powder.
  3. Remove the wings from the buttermilk and let excess drip off.
  4. Dredge each wing in the flour mixture, shaking off extra.
  5. Arrange the coated wings on a tray and let them rest for 10–15 minutes to help the coating stick.
  6. Preheat your grill to medium-high heat (around 375–400°F / 190–200°C).
  7. Lightly spray the wings with oil, then place them on the grill.
  8. Grill for 25–30 minutes, turning occasionally, until crispy and cooked through.
  9. Serve immediately with your favorite dipping sauce.
