Ingredients:
- 2 cups cooked chicken, finely chopped or shredded
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup all purpose flour
- 1/4 cup mayonnaise
Directions:
- In a large bowl, mix chicken, mozzarella, Parmesan, eggs, flour, and mayonnaise until well combined.
- Heat a non stick skillet over medium heat with a little oil.
Drop spoonfuls of mixture into skillet and flatten slightly. - Cook 3 to 4 minutes per side until golden and cooked through.
- Drain on paper towel and serve warm.
