Creamy Ham And Potato Soup

Ingredients:

  • 2 cups cooked ham, diced
  • 3 cups potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups chicken broth
  • 1 cup half-and-half
  • salt and black pepper to taste
  • ½ tsp paprika (optional)
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and cook until soft, about 4–5 minutes.
  3. Stir in the garlic and cook for 1 minute.
  4. Sprinkle in the flour and stir constantly for 1–2 minutes to form a roux.
  5. Gradually whisk in the chicken broth until smooth.
  6. Add the diced potatoes and bring to a gentle boil.
  7. Reduce heat and simmer for 10–12 minutes, until potatoes are tender.
  8. Stir in the diced ham and half-and-half.
  9. Simmer for another 5 minutes until heated through and slightly thickened.
  10. Season with salt, pepper, and paprika if using.
  11. Finish with fresh parsley and serve warm.
