Creamy Cucumber Salad 

Ingredients :

  • Cucumbers: 3–4 Kirby pickling cucumbers (washed, dried, and thinly sliced; peeling optional)
  • Red onion (optional): ½ small, thinly sliced
  • Sour cream: ½ cup
  • Mayonnaise: ⅓ cup
  • Fresh dill: ¼ cup, chopped
  • Lemon juice: ½ tablespoon, freshly squeezed
  • Salt and black pepper: To taste

Instructions : 

 

  1. Prep the Cucumbers:
    Wash and dry the cucumbers. Slice them thinly using a sharp knife, mandoline, or spiralizer for your preferred texture. You can leave the peel on for crunch, especially with Kirby cucumbers.
  2. Add Onion (Optional):
    If using, thinly slice the red onion and mix it with the cucumber slices in a large bowl.
  3. Make the Creamy Dressing:
    In a separate small bowl, whisk together the sour cream, mayonnaise, chopped dill, lemon juice, salt, and pepper. Taste and adjust the seasoning to your liking.
  4. Combine and Chill:
    Pour the dressing over the cucumber (and onion, if used). Gently toss to ensure everything is evenly coated. Cover and refrigerate for at least 30 minutes, or longer if you have time—the flavors get better as they sit!
  5. Serve and Enjoy:
    Serve cold as a side dish at a barbecue, picnic, or next to grilled chicken or fish. Top with extra dill before serving for a fresh herbal touch.
