Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella
- 4 slices cooked bacon, chopped
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups crushed Nacho Cheese Doritos
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper to taste
- Cooking spray or oil for baking/frying
Instructions:
- Preheat Oven or Pan:
- Oven: Preheat to 375°F (190°C)
- Stove: Heat oil in a skillet over medium heat
- Make the Filling:
- Mix cream cheese, mozzarella, and bacon in a bowl until creamy.
- Cut Chicken Pockets:
- Slice a pocket into each chicken breast (don’t cut all the way through).
- Stuff the Chicken:
- Spoon the cheese-bacon filling into each pocket.
- Secure with toothpicks if needed.
- Set Up Breading Stations:
- Dish 1: Flour
- Dish 2: Beaten eggs
- Dish 3: Crushed Doritos + garlic powder, paprika, salt & pepper
- Coat the Chicken:
- Dredge each piece in flour, dip in egg, then press into Doritos mix to coat fully.
- Cook the Chicken:
- Oven-bake: Place on greased baking sheet, bake 25–30 mins, until crispy and internal temp hits 165°F (74°C).
- Pan-fry: Cook 5–7 mins per side in hot oil, until golden and cooked through.
