Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella
  • 4 slices cooked bacon, chopped
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups crushed Nacho Cheese Doritos
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • Cooking spray or oil for baking/frying

Instructions:

  1. Preheat Oven or Pan:
    • Oven: Preheat to 375°F (190°C)
    • Stove: Heat oil in a skillet over medium heat
  2. Make the Filling:
    • Mix cream cheese, mozzarella, and bacon in a bowl until creamy.
  3. Cut Chicken Pockets:
    • Slice a pocket into each chicken breast (don’t cut all the way through).
  4. Stuff the Chicken:
    • Spoon the cheese-bacon filling into each pocket.
    • Secure with toothpicks if needed.
  5. Set Up Breading Stations:
    • Dish 1: Flour
    • Dish 2: Beaten eggs
    • Dish 3: Crushed Doritos + garlic powder, paprika, salt & pepper
  6. Coat the Chicken:
    • Dredge each piece in flour, dip in egg, then press into Doritos mix to coat fully.
  7. Cook the Chicken:
    • Oven-bake: Place on greased baking sheet, bake 25–30 mins, until crispy and internal temp hits 165°F (74°C).
    • Pan-fry: Cook 5–7 mins per side in hot oil, until golden and cooked through.

Tips:

  • Use spicy Doritos for extra kick!
  • Serve with ranch or sour cream dip
  • Let rest 5 mins before cutting so the filling stays inside
