Ingredients:
- 4 cups shredded green or red cabbage
- 1 large apple, julienned or thinly sliced (Granny Smith, Honeycrisp, or Fuji)
- ½ cup dried cranberries
- 1 carrot, shredded
- ¼ cup thinly sliced red onion (optional)
- ¼ cup chopped walnuts or sunflower seeds (optional)
- Dressing
- ½ cup mayonnaise or Greek yogurt
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and black pepper, to taste
Instructions:
- Add cabbage, apple, cranberries, carrot, and red onion (if using) to a large bowl.
- In a separate bowl, whisk together mayonnaise (or yogurt), apple cider vinegar, honey, salt, and pepper until smooth.
- Pour the dressing over the slaw and toss until evenly coated.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Just before serving, sprinkle with walnuts or sunflower seeds if desired.
