Cranberry Apple Coleslaw

 

Ingredients:

  • 4 cups shredded green or red cabbage
  • 1 large apple, julienned or thinly sliced (Granny Smith, Honeycrisp, or Fuji)
  • ½ cup dried cranberries
  • 1 carrot, shredded
  • ¼ cup thinly sliced red onion (optional)
  • ¼ cup chopped walnuts or sunflower seeds (optional)
  • Dressing
  • ½ cup mayonnaise or Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and black pepper, to taste

Instructions:

  1. Add cabbage, apple, cranberries, carrot, and red onion (if using) to a large bowl.
  2. In a separate bowl, whisk together mayonnaise (or yogurt), apple cider vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the slaw and toss until evenly coated.
  4. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  5. Just before serving, sprinkle with walnuts or sunflower seeds if desired.
