Ingredients:
Meatloaf
- 2 pounds lean ground beef
- 1 small onion, finely diced
- 1/2 cup finely diced bell pepper (optional)
- 1 1/2 sleeves Ritz crackers, crushed (about 48 crackers)
- 3 large eggs
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Topping
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 tablespoon yellow mustard
Instructions
- Preheat Oven
Preheat oven to 350°F (175°C). Lightly grease a large baking dish or loaf pan. - Mix the Meatloaf
In a large bowl, combine ground beef, onion, bell pepper (if using), crushed Ritz crackers, eggs, milk, shredded cheddar, salt, pepper, garlic powder, and onion powder.
Mix gently until just combined. Do not overmix. - Shape
Transfer the mixture to the prepared pan and shape into a loaf. - Prepare the Topping
In a small bowl, mix ketchup, brown sugar, and mustard until smooth. Spread evenly over the top of the meatloaf. - Bake
Bake uncovered for 60–70 minutes, or until the internal temperature reaches 160°F and the top is glossy and caramelized. - Rest and Serve
Let the meatloaf rest for 10 minutes before slicing. Serve warm.
