Cracker Barrel Meatloaf

Ingredients:

  • 2 pounds lean ground beef
  • 1 small onion, finely diced
  • 1/2 cup finely diced bell pepper (optional)
  • 1 1/2 sleeves Ritz crackers (about 48 crackers), crushed
  • 2 eggs, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

For the Topping:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 teaspoon yellow mustard

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground beef, diced onion, bell pepper (if using), crushed Ritz crackers, eggs, milk, salt, pepper, garlic powder, and onion powder. Mix until just combined—do not overmix.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. In a small bowl, stir together ketchup, brown sugar, and mustard. Spread half of the mixture over the top of the meatloaf.
  5. Bake for 45 minutes, then spread the remaining glaze on top. Continue baking for another 15–20 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  6. Let rest for 10 minutes before slicing.

Serving Suggestion: Serve with mashed potatoes, brown gravy, and green beans for the full Cracker Barrel comfort food experience.
