Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add applesauce, chia seeds, and vanilla extract. Mix well to combine.
- Stir in the rolled oats until evenly incorporated.
- Fold in the dried fruit of your choice.
- Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
- Bake for about 25 minutes, until the edges are lightly crisp. Cookies will remain soft and chewy.
