Clint’s Hippie Cookies

 

Ingredients:

  • 3 medium ripe bananas
  • 2/3 cup applesauce
  • 2 tablespoons chia seeds
  • 1 teaspoon pure vanilla extract
  • 2 cups rolled oats
  • 1/2 cup dried fruit (raisins, cranberries, or mixed)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add applesauce, chia seeds, and vanilla extract. Mix well to combine.
  4. Stir in the rolled oats until evenly incorporated.
  5. Fold in the dried fruit of your choice.
  6. Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
  7. Bake for about 25 minutes, until the edges are lightly crisp. Cookies will remain soft and chewy.
