Classic Shepherd’s Pie

Ingredients:

  • 1 lb ground lamb (or ground beef)
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups prepared mashed potatoes
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheddar cheese (optional)

Instructions:

  1. Preheat the oven
    Preheat oven to 400°F (200°C).
  2. Cook the meat and vegetables
    Heat olive oil in a large skillet over medium heat.
    Add chopped onion and carrots and cook for 4–5 minutes until softened.
    Stir in garlic and cook for 1 minute.
    Add ground lamb and cook until browned. Drain excess fat if needed.
  3. Build the filling
    Stir in tomato paste, beef broth, Worcestershire sauce, thyme, salt, and pepper.
    Simmer for 5–7 minutes until slightly thickened.
    Stir in frozen peas and remove from heat.
  4. Assemble the pie
    Transfer the meat mixture to a greased baking dish.
    Spread mashed potatoes evenly over the top.
    Sprinkle with shredded cheddar cheese if using.
  5. Bake
    Bake for 20–25 minutes, or until the top is lightly golden and the filling is bubbling.
  6. Rest and serve
    Let stand for 5–10 minutes before serving.
