Ingredients :
- 2 lbs ground beef
- 3 eggs
- ½ medium onion, chopped
- 1 tablespoon Worcestershire sauce
- 1 beef bouillon cube, dissolved in 1 cup water
- 1 sleeve saltine crackers, crushed
- 1 bell pepper, chopped
For the Glaze:
- ½ cup ketchup
- ½ cup brown sugar
- 1 teaspoon yellow mustard
Instructions :
- Prepare the Meatloaf
- In a large bowl, mix ground beef, eggs, onion, Worcestershire sauce, bouillon water, crushed saltines, and chopped bell pepper until just combined.
- Press mixture into a 10-inch cast iron skillet (or loaf pan).
- Bake
- Bake in a 350°F (175°C) oven for 30 minutes.
- Make the Glaze
- While the meatloaf bakes, whisk together ketchup, brown sugar, and mustard.
- Glaze & Finish
- After 30 minutes, spread half the glaze over the meatloaf.
- Return to oven for 10 minutes.
- Spread the remaining glaze on top and bake another 10 minutes, or until the glaze is caramelized to your liking.
