- 1½ pounds ground beef
- 1 cup breadcrumbs
- 1 onion, finely chopped

- 1 carrot, grated
- 1 celery stalk, finely chopped
- 2 large eggs
- ¼ cup ketchup
- 1 tablespoon Worcestershire sauce (optional but adds depth)

- ½ teaspoon black pepper
- ½ teaspoon dried thyme or Italian seasoning (optional)
- Extra ketchup for topping (about ¼ cup)
Instructions :
- Preheat the oven: Set it to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the veggies: Sauté the chopped onion, garlic, carrot, and celery in a small pan over medium heat with a touch of oil for about 5 minutes, or until softened. Let them cool slightly—this step boosts flavor and prevents raw veggie texture in the loaf.
- Mix the base: In a large mixing bowl, combine the ground beef, breadcrumbs, sautéed veggies, eggs, ketchup, Worcestershire sauce (if using), salt, pepper, and thyme. Mix everything just until combined—don’t overmix, or the meatloaf can get dense.
- Shape the loaf: Transfer the mixture to the prepared baking sheet and shape it into a loaf by hand, or press it evenly into a loaf pan.
- Top it off: Spread an even layer of ketchup over the top of the loaf. This creates a glossy, tangy glaze while baking.
- Bake: Place in the oven and bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 10 minutes after baking to help it slice cleanly.
- Serve: Cut into thick slices and serve with mashed potatoes, green beans, or any of your favorite sides.
