Cinnamon Roll French Toast Bites

Ingredients:

  • Cinnamon Butter
  • 35 g unsalted butter, softened
  • 2 tbsp light brown sugar
  • 1 tsp cinnamon
  • French Toast
  • 4 slices thick bread
  • 1 large egg
  • 50 ml milk
  • 1 tsp vanilla extract
  • Cinnamon Sugar Coating
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
  • Cream Cheese Icing
  • 10 g unsalted butter, softened
  • 30 g cream cheese, room temperature
  • 20 g icing sugar
  • Serves: 2

Instructions:

  1. Make the cinnamon butter: In a small bowl, mix softened butter, brown sugar, and cinnamon until smooth. Set aside.
  2. Prepare the bread: Cut each slice of bread into bite-sized cubes. Using a small knife or your finger, gently create a pocket in each cube and stuff with a small amount of cinnamon butter.
  3. Make the egg mixture: In a bowl, whisk together egg, milk, and vanilla.
  4. Cook the bites: Dip the stuffed bread cubes into the egg mixture, coating all sides. Cook in a nonstick pan over medium heat until golden brown on all sides and cooked through.
  5. Coat: Mix granulated sugar and cinnamon in a bowl. While the bites are still warm, toss them in the cinnamon sugar until fully coated.
  6. Make the icing: Whisk together butter, cream cheese, and icing sugar until smooth and creamy.
  7. Serve: Enjoy the warm cinnamon roll French toast bites dipped in cream cheese icing.
