Christmas Rice Crispy Treats

Ingredients:

  • 3 cups puffed rice cereal
  • 1 ½ cups mini marshmallows (or 1 cup mini marshmallows + ¼ cup marshmallow fluff)
  • 4 Tbsp unsalted butter
  • 1 tsp vanilla extract
  • 2 cups white chocolate chips or white chocolate candy melts
  • 1 Tbsp coconut oil (optional)
  • ½ cup red, green & white nonpareils

Instructions:

  1. Melt the butter in a saucepan over low heat. Add the mini marshmallows and fluff, stirring until smooth. Remove from heat and mix in the vanilla.
  2. Fold in the puffed rice cereal until fully coated. Let cool 2–3 minutes.
  3. Lightly grease your hands and roll the mixture into 1–1.5 inch balls. Place on a parchment-lined tray to cool completely.
  4. Melt the white chocolate in 20–30 second intervals, stirring until smooth. Add coconut oil if needed.
  5. Dip each rice crispy ball into the melted chocolate, tapping off excess. Sprinkle immediately with nonpareils.
  6. Let the treats set at room temperature or chill for 15–20 minutes until firm.
