Ingredients:
- 3 cups puffed rice cereal
- 1 ½ cups mini marshmallows (or 1 cup mini marshmallows + ¼ cup marshmallow fluff)
- 4 Tbsp unsalted butter
- 1 tsp vanilla extract
- 2 cups white chocolate chips or white chocolate candy melts
- 1 Tbsp coconut oil (optional)
- ½ cup red, green & white nonpareils
Instructions:
- Melt the butter in a saucepan over low heat. Add the mini marshmallows and fluff, stirring until smooth. Remove from heat and mix in the vanilla.
- Fold in the puffed rice cereal until fully coated. Let cool 2–3 minutes.
- Lightly grease your hands and roll the mixture into 1–1.5 inch balls. Place on a parchment-lined tray to cool completely.
- Melt the white chocolate in 20–30 second intervals, stirring until smooth. Add coconut oil if needed.
- Dip each rice crispy ball into the melted chocolate, tapping off excess. Sprinkle immediately with nonpareils.
- Let the treats set at room temperature or chill for 15–20 minutes until firm.
