Ingredients:
- For the Fluffy Base:
- 1 package (3.4 oz) instant pistachio pudding mix (do not use cook-and-serve)
- 1 can (20 oz) crushed pineapple, not drained
- 1 container (8 oz) Cool Whip, thawed
- For the Mix-Ins:
- 1 cup miniature marshmallows
- ½ cup maraschino cherries, drained and quartered
- 1 can (11 oz) mandarin orange segments, well drained (optional)
- ½ cup chopped pecans or walnuts (optional)
- For Garnish:
- Additional maraschino cherries
- Extra chopped nuts
Instructions:
- In a large mixing bowl, add the dry pistachio pudding mix.
- Pour in the crushed pineapple with its juice and stir until the pudding begins to thicken.
- Gently fold in the Cool Whip until fully combined and pale green.
- Fold in the marshmallows, cherries, and optional mandarin oranges and nuts.
- Transfer to a serving bowl, cover, and refrigerate for at least 4 hours or overnight.
- Stir gently before serving and garnish with cherries and nuts.
