Ingredients:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cranberry sauce
- 1/4 cup ketchup
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
- Mix ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper.
- Form 1-inch meatballs and arrange on the baking sheet. Bake 18–20 minutes.
- In a saucepan, simmer cranberry sauce, ketchup, soy sauce, and apple cider vinegar for 5 minutes.
- Toss baked meatballs in the warm cranberry glaze and serve.
