Christmas Cranberry Chicken Meatballs

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cranberry sauce
  • 1/4 cup ketchup
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
  2. Mix ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper.
  3. Form 1-inch meatballs and arrange on the baking sheet. Bake 18–20 minutes.
  4. In a saucepan, simmer cranberry sauce, ketchup, soy sauce, and apple cider vinegar for 5 minutes.
  5. Toss baked meatballs in the warm cranberry glaze and serve.
