Christmas Cookie Lasagna

 

Ingredients:

  • Crust
  • 24 Christmas sugar cookies (or shortbread), crushed
  • 6 tbsp unsalted butter, melted
  • Cheesecake Layer
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping or whipped heavy cream
  • Pudding Layer
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1½ cups cold milk
  • ½ tsp almond extract (optional)
  • ½ cup crushed Christmas cookies
  • Topping
  • 2 cups whipped topping
  • Crushed cookies, sprinkles, or mini chocolate chips

Instructions:

  1. Mix crushed cookies with melted butter. Press firmly into an 8×8-inch dish. Chill.
  2. Beat cream cheese, sugar, and vanilla until smooth. Fold in whipped topping. Spread over crust.
  3. Whisk pudding mix, milk, and almond extract until thick. Stir in crushed cookies and spread over cheesecake layer.
  4. Top with whipped topping and garnish as desired.
  5. Refrigerate at least 4 hours or overnight before slicing.
