Christmas Cherry Balls

Ingredients:

  • 1 jar (10 oz) maraschino cherries, well-drained and patted dry
  • 1 ½ cups graham cracker crumbs
  • 1 cup sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • Extra shredded coconut for rolling
  • Optional: ½ cup finely chopped pecans or walnuts

Instructions:

  1. In a large bowl, mix graham cracker crumbs, shredded coconut, and sweetened condensed milk until it forms a soft dough.
  2. Stir in the vanilla extract.
  3. Fold in the cherries and optional nuts.
  4. Roll the mixture into 1-inch balls.
  5. Coat each ball in extra shredded coconut.
  6. Place on a parchment-lined tray and refrigerate for at least 2 hours until firm.
