Chicken Fajita Quesadillas

Ingredients:

  • 2 lbs chicken thighs, chopped
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, sliced
  • 2–3 tbsp taco seasoning
  • 6–8 large flour tortillas
  • 2–3 cups shredded Mexican cheese
  • 3 ripe avocados
  • ½ onion, diced
  • 1 tbsp cilantro, chopped
  • 2 jalapeños, diced
  • 1 tomato, diced
  • Juice of 2 limes
  • Salt & pepper to taste

Instructions:

  1. Season chicken with taco seasoning and cook in oil until browned. Remove.
  2. Sauté peppers and onions in the same pan until tender.
  3. Return chicken to pan and mix. Let cool slightly.
  4. Make guacamole: mash avocados and mix with onion, cilantro, jalapeños, tomato, lime juice, salt, and pepper.
  5. Assemble quesadillas with cheese, chicken fajita mix, and more cheese. Fold.
  6. Cook 2–3 minutes per side until golden and melted.
  7. Rest 1 minute, slice, and serve with guacamole.
