Chewy Banana Bread Cookies

Ingredients:

  • 1 large very ripe banana, mashed (about 1/2 cup)
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Optional: 1/8 teaspoon nutmeg

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together mashed banana, melted butter, and brown sugar until smooth.
  3. Whisk in the egg and vanilla extract until fully combined.
  4. In a separate bowl, mix flour, baking soda, salt, cinnamon, and nutmeg if using.
  5. Gently fold the dry ingredients into the wet ingredients just until combined. The dough will be soft and sticky.
  6. Chill the dough for 20–30 minutes.
  7. Scoop about 2 tablespoons of dough per cookie onto prepared baking sheets, spacing well apart.
  8. Bake for 11–13 minutes, until edges are lightly golden and centers are soft.
  9. Let cookies cool on the baking sheet to set before serving.
