Ingredients:
- 1 large very ripe banana, mashed (about 1/2 cup)
- 1/2 cup unsalted butter, melted and cooled
- 3/4 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- Optional: 1/8 teaspoon nutmeg
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, whisk together mashed banana, melted butter, and brown sugar until smooth.
- Whisk in the egg and vanilla extract until fully combined.
- In a separate bowl, mix flour, baking soda, salt, cinnamon, and nutmeg if using.
- Gently fold the dry ingredients into the wet ingredients just until combined. The dough will be soft and sticky.
- Chill the dough for 20–30 minutes.
- Scoop about 2 tablespoons of dough per cookie onto prepared baking sheets, spacing well apart.
- Bake for 11–13 minutes, until edges are lightly golden and centers are soft.
- Let cookies cool on the baking sheet to set before serving.
