Cheesy Stuffed Meatloaf Bites

Ingredients

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large egg
  • 1/4 cup milk
  • 4 oz mozzarella cheese, cut into small cubes
  • 2 tablespoons ketchup (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground meat, breadcrumbs, Parmesan, salt, pepper, garlic powder, onion powder, egg, and milk. Mix until evenly blended.
  3. Take a small amount of the mixture and flatten it in your hand. Place a cube of mozzarella in the center, then roll it into a ball, sealing the cheese inside.
  4. Arrange the meatloaf bites on the prepared baking sheet.
  5. Brush the tops with ketchup.
  6. Bake for 18–20 minutes, or until cooked through and golden brown.
  7. Let cool slightly before serving.

Serving Tip:
Serve warm with mashed potatoes, pasta, or as a party appetizer with dipping sauce.
