- 4 cups shredded mozzarella cheese
- 8 low-carb tortillas
- ½ cup pizza sauce
- 48 slices pepperoni (about 6 per tortilla)
- 2 tablespoons grated Parmesan cheese (optional, for topping)
- 1 teaspoon Italian seasoning or dried oregano (optional)
- Cooking spray or olive oil
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
2. Prepare the Tortillas
Lay out each tortilla on a flat surface. Spread about 1 tablespoon of pizza sauce evenly over each one.
3. Add the Fillings
Sprinkle about ½ cup of shredded mozzarella cheese over the sauce, then place 6 slices of pepperoni evenly on top.
4. Roll Them Up
Tightly roll each tortilla like a burrito and place them seam-side down on the prepared baking sheet.
5. Add Toppings
Lightly spray or brush the tops with olive oil. Sprinkle extra mozzarella, Parmesan cheese, and Italian seasoning for more flavor, if desired.
6. Bake
Bake in the preheated oven for 12–15 minutes, or until the roll-ups are golden brown and the cheese is melted and bubbly.
7. Serve
Allow the roll-ups to cool for 2–3 minutes before slicing in half, if desired. Serve warm with extra pizza sauce for dipping.
