Cheesy Mushroom Casserole

Ingredients:

  • 2 cups sliced mushrooms
  • 1 cup uncooked rice
  • 3 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix mushrooms, rice, vegetable broth, cheddar cheese, sour cream, garlic powder, onion powder, salt, and black pepper.
  3. Transfer to a greased 9×13-inch baking dish.
  4. Bake for 45 minutes, or until rice is tender.
  5. Let rest a few minutes before serving.
