Savory Base:

1 lb ground beef (85/15 blend recommended)

1 yellow onion, diced

3-4 lbs russet potatoes, peeled & thinly sliced

8 oz sharp cheddar cheese, shredded (plus extra for topping)
Creamy Sauce:

1 can (10.5 oz) cheddar cheese soup

12 oz evaporated milk (or whole milk)

½ cup whole milk
-
1 tsp salt
-
½ tsp black pepper

Instructions :

Prep: Preheat oven to 350°F (175°C). Grease 9×13 dish.

Cook Beef: In skillet, brown beef and onion. Drain fat.

Slice Potatoes: Use mandoline for ¼” slices.

Layer:

1st layer: Potatoes + salt/pepper

2nd layer: ⅓ beef + ⅓ cheddar

Repeat twice, ending with cheese

Sauce: Whisk soup, evaporated milk, milk, salt, and pepper. Pour over layers.

Bake: Cover with foil. Bake 60 mins. Uncover, bake 15 mins until golden.
