Cheeseburger Quesadillas – Crispy, Cheesy, Burger-Inspired Bites!

Ingredients :

For the Beef Filling:

  • 1 lb lean ground beef
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard

For the Quesadillas:

  • 4 large flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup diced pickles (or more to taste)
  • ¼ cup diced red onions (optional)
  • Butter or oil for greasing the pan
  • For the Burger Sauce (Optional but SO good!):
  • ¼ cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp mustard
  • 1 tsp pickle juice
  • Pinch of paprika

Instructions : 

1. Prepare the Beef Filling:

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 6–8 minutes. Drain any excess fat.

Stir in salt, pepper, onion powder, garlic powder, ketchup, and mustard. Mix well and cook for another 2–3 minutes to let the flavors blend. Remove from heat and set aside.

2. Make the Sauce:

In a small bowl, mix together mayo, ketchup, mustard, pickle juice, and paprika. Chill in the fridge while assembling the quesadillas.

3. Assemble the Quesadillas:

Lay out a tortilla and sprinkle one half with a mix of cheddar and mozzarella cheese.

Add a layer of the seasoned beef, a few diced pickles, and onions if using. Drizzle with burger sauce if desired. Top with a little more cheese and fold the tortilla in half.

4. Cook the Quesadillas:

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.

Place the folded tortilla in the pan and cook for 2–3 minutes per side, or until golden brown and the cheese is melted. Press slightly with a spatula for even browning.

Repeat with the remaining tortillas.

5. Serve:

Slice each quesadilla into wedges and serve hot with extra burger sauce or ketchup for dipping.
