Carrot Salad with Pineapple and Raisins

Ingredients:

  • 2 cups shredded carrots
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup raisins
  • 1/4 cup Greek yogurt
  • 1 tbsp honey
  • 1/2 tsp lemon juice
  • 1/4 tsp cinnamon

Instructions:

  1. In a medium bowl, combine shredded carrots, pineapple, and raisins.
  2. In a separate small bowl, whisk together Greek yogurt, honey, lemon juice, and cinnamon until smooth.
  3. Pour the dressing over the carrot mixture and toss gently to coat evenly.
  4. Chill for at least 30 minutes before serving for best flavor.
