Caramelized Sweet Potatoes with Maple , Feta & Crunchy Walnuts

Ingredients :

  • 2 large sweet potatoes, peeled and cut into 1-inch (2.5 cm) cubes
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30 ml) pure maple syrup
  • ½ teaspoon smoked paprika (optional)
    Salt and black pepper , to taste
  • ½ cup (75 g) crumbled feta cheese
  • ¼ cup (30 g) walnuts , toasted and roughly chopped
  • 1 tablespoon (15 ml) extra maple syrup, for drizzling

Directions :

  1. Preheat oven to 400°F (200°C) . Line a baking sheet with parchment paper .
  2. Toss sweet potato cubes with olive oil , maple syrup , paprika , salt , and pepper .
  3. Spread evenly on the baking sheet .
  4. Roast for 25–30 minutes , flipping halfway , until caramelized and tender .
  5. Transfer to a serving platter .
  6. Sprinkle with feta and toasted walnuts .
  7. Drizzle with a little extra maple syrup before serving warm .
