Ingredients :
- 2 large sweet potatoes, peeled and cut into 1-inch (2.5 cm) cubes
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) pure maple syrup
- ½ teaspoon smoked paprika (optional)
Salt and black pepper , to taste - ½ cup (75 g) crumbled feta cheese
- ¼ cup (30 g) walnuts , toasted and roughly chopped
- 1 tablespoon (15 ml) extra maple syrup, for drizzling
Directions :
- Preheat oven to 400°F (200°C) . Line a baking sheet with parchment paper .
- Toss sweet potato cubes with olive oil , maple syrup , paprika , salt , and pepper .
- Spread evenly on the baking sheet .
- Roast for 25–30 minutes , flipping halfway , until caramelized and tender .
- Transfer to a serving platter .
- Sprinkle with feta and toasted walnuts .
- Drizzle with a little extra maple syrup before serving warm .
