Ingredients:
- Éclair Base
- 1 package graham crackers
- Whipped Cream Layer
- 2 cups heavy cream
- Apple Filling
- 2 medium apples, peeled and diced (Fuji or Honeycrisp work best)
- 1 tsp lemon juice
- 1 tsp cinnamon
- Caramel Layer
- 1 cup caramel sauce (store-bought or homemade)
- Optional Topping
- Chopped pecans or walnuts
Instructions:
- Arrange a single layer of graham crackers in the bottom of a rectangular dish.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- In another bowl, toss the diced apples with lemon juice and cinnamon.
- Spread a generous layer of whipped cream over the graham crackers.
- Evenly distribute the apple mixture on top of the cream layer.
- Drizzle caramel sauce over the apples.
- Add another layer of graham crackers if desired, then top with remaining whipped cream and more caramel sauce.
- Sprinkle with chopped nuts if using.
- Cover tightly and refrigerate for at least 2 hours to allow the layers to soften and set.
- Slice and serve chilled.
