Caramel Apple Éclair Cake

 

Ingredients:

  • Éclair Base
  • 1 package graham crackers
  • Whipped Cream Layer
  • 2 cups heavy cream
  • Apple Filling
  • 2 medium apples, peeled and diced (Fuji or Honeycrisp work best)
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • Caramel Layer
  • 1 cup caramel sauce (store-bought or homemade)
  • Optional Topping
  • Chopped pecans or walnuts

Instructions:

  1. Arrange a single layer of graham crackers in the bottom of a rectangular dish.
  2. In a mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, toss the diced apples with lemon juice and cinnamon.
  4. Spread a generous layer of whipped cream over the graham crackers.
  5. Evenly distribute the apple mixture on top of the cream layer.
  6. Drizzle caramel sauce over the apples.
  7. Add another layer of graham crackers if desired, then top with remaining whipped cream and more caramel sauce.
  8. Sprinkle with chopped nuts if using.
  9. Cover tightly and refrigerate for at least 2 hours to allow the layers to soften and set.
  10. Slice and serve chilled.

  13. Can be made up to 24 hours in advance
  14. Store leftovers covered in the refrigerator
