Ingredients:
- 36 Club crackers (or any buttery cracker)
- 1/2 lb regular sliced bacon (not thick-cut)
- 1/3 cup brown sugar, firmly packed
- 1/8 tsp cayenne pepper (optional, or use black pepper)
Instructions:
- Preheat the oven to 325°F.
- Line a baking sheet with parchment paper or foil. Place a wire rack on top and spray the rack with nonstick cooking spray.
- Arrange the crackers in a single layer on the wire rack.
- Cut the bacon into thirds (or fourths if very long) and place one piece on top of each cracker.
- In a small bowl, mix the brown sugar and cayenne pepper. Sprinkle about 1 teaspoon of the mixture over each bacon-topped cracker.
- Bake for about 22 minutes, or until the bacon is browned and crisp to your liking.
- Loosen the crackers from the rack before they cool. Let them cool completely to harden before serving.
