Candied Bacon Crackers

 

Ingredients:

  • 36 Club crackers (or any buttery cracker)
  • 1/2 lb regular sliced bacon (not thick-cut)
  • 1/3 cup brown sugar, firmly packed
  • 1/8 tsp cayenne pepper (optional, or use black pepper)

Instructions:

  1. Preheat the oven to 325°F.
  2. Line a baking sheet with parchment paper or foil. Place a wire rack on top and spray the rack with nonstick cooking spray.
  3. Arrange the crackers in a single layer on the wire rack.
  4. Cut the bacon into thirds (or fourths if very long) and place one piece on top of each cracker.
  5. In a small bowl, mix the brown sugar and cayenne pepper. Sprinkle about 1 teaspoon of the mixture over each bacon-topped cracker.
  6. Bake for about 22 minutes, or until the bacon is browned and crisp to your liking.
  7. Loosen the crackers from the rack before they cool. Let them cool completely to harden before serving.
