Caesar Chicken with Asparagus

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup Caesar dressing (store-bought or homemade)
  • 1 bunch fresh asparagus, trimmed
  • 1/2 cup shredded mozzarella or Parmesan cheese (optional for extra cheesiness!)

Directions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish large enough to fit the chicken and asparagus side by side.
  2. Season the chicken with salt and black pepper on both sides.
  3. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear for 2–3 minutes on each side, just until lightly golden. You’re not cooking them through—just building flavor!
  4. Arrange in the baking dish: Place the seared chicken breasts in the baking dish. Pour the Caesar dressing evenly over the top of the chicken.
  5. Add the asparagus: Arrange the asparagus spears around the chicken. If you like your asparagus soft, tuck them under the dressing slightly. For a crisper finish, keep them on top.
  6. Top with cheese (optional): Sprinkle shredded mozzarella or Parmesan over the chicken and asparagus for a cheesy golden crust.
  7. Bake: Place in the oven and bake uncovered for 25–30 minutes, or until the chicken is cooked through (internal temp of 165°F or 74°C) and the asparagus is tender.
  8. Serve: Let it rest for a few minutes, then plate it up with a spoonful of those creamy juices. Goes beautifully with roasted potatoes or garlic rice!
