Cabbage and Sausage Soup

Ingredients:

  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 1 head cabbage, chopped into bite-size pieces
  • 32 oz beef broth
  • 4 carrots, sliced
  • 1 medium white onion, chopped
  • 4 medium potatoes, quartered
  • 1 (14 oz) package smoked sausage, sliced
  • Water, as needed

Instructions:

  1. Add all ingredients to a large pot or Dutch oven. Stir well and bring to a gentle simmer.
  2. Cook for about 1 hour, stirring occasionally, until the carrots and potatoes are fork-tender. Add water as needed to reach your desired consistency.
  3. Serve hot.
