Buckeye Bars

Ingredients:

Peanut Butter Layer

  1. 8 tablespoons salted sweet cream butter, softened
  2. 3 cups creamy peanut butter
  3. 2 teaspoons pure vanilla extract
  4. 4 cups powdered sugar
  5. Chocolate Ganache
  6. 12 ounces semi-sweet chocolate chips
    2 tablespoons vegetable oil

Instructions:

  1. Line a 9×13-inch baking dish with parchment paper.
  2. In a large mixing bowl, beat the softened butter and peanut butter together until smooth and creamy. Add the vanilla extract and mix well. Gradually add the powdered sugar, mixing until fully incorporated and thick.
  3. Press the peanut butter mixture evenly into the prepared baking dish. Smooth the top with a spatula.
  4. In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring between each interval, until melted and smooth.
  5. Pour the melted chocolate over the peanut butter layer and spread evenly with a spatula.
  6. Refrigerate for 1 to 2 hours, or until the chocolate is fully set. Slice into bars and serve.

Storage

Store the bars in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months.
