Ingredients:
Brisket:

1 lb USDA Prime brisket

1 cup small-batch bourbon

½ cup dark maple syrup
Assembly:
- 8 slices artisan sourdough
- 2 cups aged white cheddar
- 4 Belgian-style waffles
- European butter
Instructions:

Slow-Cook Brisket:
Place brisket in slow cooker. Pour bourbon + maple syrup over. Cook 8 hrs on low until shreddable. -
Shred Beef:
Remove, shred (discard fat). Reserve juices. -
Grill Sandwiches:
Butter one side of each sourdough slice with European butter.
In cast iron skillet:-
Bread butter-down

Layer cheddar + shredded brisket

Top bread butter-up
Grill until golden, flip carefully.

Heat Belgian waffles per package (or use waffle maker). -
Assemble Wafflewich:
Sandwich grilled cheese between two waffles.
