Bourbon-Maple Brisket Grilled Cheese Wafflewich

Ingredients:

Brisket:

  • 1 lb USDA Prime brisket

  • 1 cup small-batch bourbon

  • ½ cup dark maple syrup

Assembly:

  • 8 slices artisan sourdough
  • 2 cups aged white cheddar
  • Belgian-style waffles
  • European butter

Instructions:

  1. Slow-Cook Brisket:
    Place brisket in slow cooker. Pour bourbon + maple syrup over. Cook 8 hrs on low until shreddable.

  2. Shred Beef:
    Remove, shred (discard fat). Reserve juices.

  3. Grill Sandwiches:
    Butter one side of each sourdough slice with European butter.
    In cast iron skillet:

    • Bread butter-down

    • Layer cheddar + shredded brisket

    • Top bread butter-up
      Grill until golden, flip carefully.

  4. Crisp Waffles:
    Heat Belgian waffles per package (or use waffle maker).

  5. Assemble Wafflewich:
    Sandwich grilled cheese between two waffles.
    Optional: Brush with reserved bourbon-maple glaze.
