Bok Choy and Mushroom Stir Fry

Ingredients :

  • 2 tablespoons sesame oil
  • 4 cups bok choy, washed and sliced
  • 2 cups assorted mushrooms, such as shiitake or cremini, sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
    Sesame seeds for garnish
    Green onions, sliced for garnish

Directions:

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the mushrooms and bell pepper, stir-frying until they begin to soften, about 3-4 minutes.
  3. Add the bok choy, garlic, and ginger to the skillet. Continue to stir-fry until the bok choy is wilted and the garlic is fragrant, about 2 minutes.
  4. Stir in the soy sauce, oyster sauce, and sugar, mixing well to coat the vegetables.
  5. Pour in the cornstarch mixture and stir until the sauce thickens and becomes glossy, about 1 minute.
  6. Serve the stir fry immediately, garnished with sesame seeds and green onions. This vibrant stir fry offers a tasty combination of textures and flavors, perfect for a quick and healthy meal.
