Ingredients:
- 4 cups pancake mix
- 3 cups water (or as directed on pancake mix package)
- 1 lb breakfast sausage, cooked and drained
- 1 1/2 cups fresh blueberries
- 1/3 cup maple syrup
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the breakfast sausage in a skillet until fully browned. Drain excess grease and set aside.
- In a large bowl, prepare the pancake batter according to package directions using the water.
- Stir in the cooked sausage, blueberries, and maple syrup. Reserve a small amount of sausage and blueberries for topping if desired.
- Pour the batter into the prepared baking dish and evenly spread it out.
- Sprinkle the reserved sausage and blueberries over the top.
- Bake for 40–45 minutes, or until the center is set and a toothpick inserted comes out clean.
- Serve warm with additional maple syrup if desired.
