Instructions:
- Preheat Oven:
Preheat oven to 375°F (190°C). Grease or line a 9×13-inch baking dish. - Prepare the Crumb Mixture:
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and baking soda.
Add the cold butter cubes and cut into the mixture using a pastry cutter or your hands until it forms pea-sized crumbs. - Add the Egg:
Mix in the egg until the dough starts to come together and is evenly combined. - Form the Crust:
Press about 3/4 of the crumb mixture firmly into the bottom of the prepared baking dish to form an even crust. - Prepare the Filling:
In a separate bowl, combine blueberries, lemon juice, vanilla extract, and cornstarch. Stir until evenly coated. - Assemble:
Spread the blueberry mixture evenly over the crust.
Sprinkle the remaining crumb mixture over the top. - Bake:
Bake for 40 minutes, or until the top is lightly golden and the filling is bubbling. - Cool and Serve:
Allow the bars to cool for at least 20 minutes before slicing into squares.
