Blueberry Breakfast Quesadillas

Ingredients

  • 4 large flour tortillas (8–10 inch size)
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries (or thawed frozen blueberries, well-drained)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking
  • Optional: powdered sugar or extra honey for serving

Instructions

  1. In a bowl, mix the softened cream cheese, honey (or maple syrup), and vanilla extract until smooth.
  2. Spread the mixture evenly over half of each tortilla.
  3. Add a handful of blueberries on top, then fold the tortilla in half to seal.
  4. Heat a nonstick skillet over medium heat and lightly grease it with butter or oil.
  5. Cook each quesadilla for about 2–3 minutes per side, until golden brown and crisp.
  6. Slice into wedges and serve warm, dusted with powdered sugar or drizzled with extra honey if desired.

Tip: Add a sprinkle of cinnamon or a few white chocolate chips for a sweet twist!
