Best Double Chocolate Coca-Cola Cake

Ingredients:

For the Cake

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup Coca-Cola (regular, not diet)
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

For the Chocolate Frosting

  • 1/4 cup unsalted butter
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 cup Coca-Cola
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and lightly flour an 8×8-inch or 9×9-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  3. Add melted butter, Coca-Cola, eggs, buttermilk, and vanilla extract. Mix until smooth and well combined.
  4. Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. While the cake bakes, prepare the frosting. In a saucepan over medium heat, melt butter. Stir in cocoa powder and Coca-Cola. Bring just to a gentle boil, then remove from heat.
  6. Whisk in powdered sugar and vanilla until smooth.
  7. Pour frosting over the warm cake and spread evenly. Allow to set before slicing.

  • This cake tastes even better the next day as the flavors deepen.
