Ingredients:
- 1 lb (450 g) ground beef (80/20 for richer flavor or lean for a lighter dish)
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 12 oz rotini pasta
- 2 tablespoons olive oil or butter
- 2 tablespoons all-purpose flour
- 2 cups milk (whole or 2%)
- 1 cup heavy cream (optional, for extra richness)
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper, to taste
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (optional garnish)
Instructions:
- Cook the rotini in a large pot of salted boiling water according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease if needed and set aside.
- In the same skillet, add olive oil or butter. Sauté the diced onion until soft and translucent, about 3–4 minutes.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Sprinkle the flour over the onions and garlic, stirring constantly for 1 minute.
- Gradually whisk in the milk (and cream, if using) until smooth. Simmer until the sauce thickens.
- Stir in the Parmesan cheese until melted and smooth. Season with salt, pepper, Italian seasoning, and red pepper flakes if desired.
- Add the cooked beef back to the skillet, then fold in the cooked rotini.
- Toss until everything is well coated and heated through.
Serving Suggestions
- Serve hot with extra Parmesan cheese on top.
- Pair with garlic bread or a simple green salad.
Optional Variations
- Add sautéed mushrooms or spinach for extra flavor and nutrition.
- Substitute ground turkey or chicken for a lighter option.
- Use half-and-half instead of milk and cream for a balanced richness.
This Beef and Rotini in Garlic Parmesan Sauce is creamy, comforting, and perfect for busy weeknights.
